Buffalo Wings with Bleu Cheese Dipping Sauce
Ingredients:
4 pounds chicken wings
3 tablespoons butter – melted
3 tablespoons Worcestershire sauce
2 teaspoons light ketchup -- or low carb
2 cloves garlic – mashed
Dipping Sauce
2/3 cup mayonnaise
1/3 cup sour cream
1/3 cup blue cheese
1/2 teaspoon Tabasco sauce
Instructions:
Cut off tip of wing, separate at joint. Place on wire rack in roasting pan. Roast at 350 deg. for 1 1/2 hours. Turn once during cooking. Combine melted butter, Tabasco , Worcestershire, ketchup, garlic and mix well in large bowl. Place chicken in bowl and mix well. Crumble cheese coarsely, mix with other dip ingredients in separate bowl and serve with wings.

Cheese Ball
Ingredients:
(1) 8 oz p of cream cheese (1) 8 oz package of sharp cheese
Onion powder
Slivered almonds
Instructions: Let cheeses soften mix in mixer add powder to flavor roll in ball or log with foil add slivered almonds serve w/celery.

Cheese Puffs
Ingredients:
2 egg whites, beaten until stiff 1 cup (250 ml) shredded Cheddar, Swiss, or American cheese
1 tsp (5 ml) Worcestershire sauce
1/2 tsp (2 ml) paprika
1/2 tsp (2 ml) dry mustard
Cayenne pepper to taste
10 to 20 (depending on size) small rounds of bread, toasted
Instructions: Combine the beaten egg whites, cheese, Worcestershire sauce, paprika, mustard, and cayenne, folding gently so as not to deflate the egg whites. Spread this mixture on the rounds of toast. Place on a
baking sheet and place under a preheated broiler. Cook for 5 to 7 minutes, until the cheese mixture is puffed and golden brown.

Crab Ball
Crab Ball Appetizer:
1 lb. crab meat (jumbo lump or backfin preferred) 16 oz. cream cheese (softened)
1 teaspoons Old Bay
Cocktail Sauce:
1/4 cup ketchup
Prepared horseradish to taste (approximately 2 teaspoons)
Remove all shells from crabmeat. Using your hands, combine crabmeat, cream cheese, and Old Bay. Shape into a ball and chill. Combine ketchup and horseradish. Spread on crab ball. Serve with crackers.

Classic Deviled Eggs
Ingredients:
6 hard-boiled Eggs (large) 3 tablespoons mayonnaise or salad dressing
1-tablespoon sugar
1-teaspoon mustard (honey mustard is great!)
1-teaspoon vinegar
Salt & pepper to taste
Paprika (optional)
Instructions: Boil eggs, place eggs in cold water, cover completely; bring to a boil over high heat. Reduce heat and cook for 10-12 minutes. Chill eggs with cold water and place in refrigerator till cooled. Remove the shell from the eggs, and cut into halves, lengthwise. Remove the yolks, and place in a bowl. Mash yolks then add remaining ingredients. Spoon mixture back into the white halves. Garnish with a light sprinkling of paprika.

Parmesan Cheese Pinecones
Ingredients:
12 ounces cream cheese – softened 1/2 cup grated Parmesan cheese
1/3 cup mayonnaise
3/4 teaspoon oregano – crushed
1/4 teaspoon garlic powder
2 cups almonds -- whole
Instructions: Combine all ingredients except nuts. Shape into a pair of " pine cones" on a large serving plate. Use the almonds to form `petals'. Decorate the plate with evergreen sprigs and Christmas balls. Serve with low carb crackers, breads or veggies.

Reuben Roll-Ups
Ingredients:
5 slices deli corned beef (appx. 1/4 lb.) 5 Tbsp. canned sauerkraut
5 tsp. Dijon mustard
2 1/2 slices Swiss cheese
Instructions: Spread mustard on the corned beef. Spread the sauerkraut on the mustard. Then put 1/2 slice of the cheese on. Roll up, and secure with a toothpick. Microwave on high for about 45 seconds, or however melted you like it.
Makes 5 roll-ups for 1 serving

Seafood Veggie Dip
Ingredients:
8 ounces cream cheese 8 ounces sour cream
8 ounces cooked shrimp
3 tablespoons onion soup mix
1 teaspoon ketchup
1/8-teaspoon Worcestershire sauce
Instructions: Cream the softened cream cheese until it is smooth. Add the sour cream, onion soup mix, ketchup,& Worcestershire sauce; stir well to combine. Stir in the shrimp, mix well. Cover & chill at least 1 hour for flavors to blend. Serve with fresh, crisp veggies or crackers. Carb count will be a bit lower if using low carb ketchup.
Carb count for the whole recipe is 40.9 minus 4.7 gr. fiber = 36.2

Seafood Stuffed Mushrooms
Ingredients:
30 large mushroom caps 1/2 cup cooked shrimp
1/2 cup crab meat
3/4 cup cream cheese
1 teaspoon lemon juice
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/2 teaspoon chopped green onions
2 teaspoons Parmesan cheese
1/4 cup grated cheddar cheese
Instructions:
Separate stems from caps. Finely chop the stems & sauté in a bit of butter until softened; cool. Cream the cream cheese, add the cooled stems, then stir in all ingredients EXCEPT for the cheddar cheese. Spoon filling into mushroom caps & place on a cookie sheet. Top with the cheddar cheese; broil until golden brown.

Seven Layer Tex-Mex Fiesta Dip
Ingredients:
1 package Taco seasoning mix -- 1.25 oz. 1 pound lean ground beef
3/4 cup water
3/4 cup grated cheddar cheese
2 1/4 ounces sliced black olives – drained
1 medium tomato – chopped
1 large avocado – mashed
1/2 cup sour cream
3/4 cup salsa -- or your choice*
1/4 cup sliced green onions
Instructions: In a medium skillet, brown the ground beef; drain well. Add the taco seasoning & the water. Cook according to package directions, cool. Spread the cooled beef onto the bottom of a 9" square pan. Layer the remaining ingredients in the order given. Can be served chilled or heated through in the microwave before serving. Serve with low carb crackers or veggies.

is 39.4 minus 11.6 gr. Fiber = 27.8 carbs

Shrimp Spread
Ingredients:
8 ounces cream cheese – softened 1/8 cup cream
1/8 cup water
1 tablespoon minced onion
1 1/2 teaspoons celery salt
2 teaspoons Worcestershire sauce
1/2 cup mayonnaise – optional
8 ounces canned shrimp
Instructions: Mix altogether and refrigerate for at least one hour. Great spread on lowcarb
bread "crackers", celery sticks, or Wasa crispbreads.
NOTE: For a thicker spread, don't use the mayonnaise.
